Corn, Black Bean, and Mango Salad 2 tsp canola oil Heat oil in a lg nonstick skillet over med-high heat. Add garlic; cook, stirring, until fragrant, about 30 secs. Stir in corn; cook, stirring occasionally, until browned, abt 8 mins. Transfer corn mix to lg bowl. Stir in mango, beans, onion, bell pepper, lime juice, Jalapeno, cilantro, cumin, and salt. I have never cooked a lobster but it sure looks good and I know it is one of Mike's favorites. I'm glad you had a good dinner. Wish I could have been there to help you celebrate. 14 Sep 2009 6:18am @Marion: I'm smiling, because I don't always love cilantro, a little goes a long way, but it was good in this, along with the roasted corn flavor, the Jalapeno and the Mango. The lobster was delicious Saturday; Sunday we made mini lobster rolls, and there's some left for a salad. You can tell Yoshiyuki that we had a small dish of melted butter, but other than that, no "sauce" was on it, just plain, unadulterated lobster meat. If you don't care for cilantro, parsley could be used. I went a little light on the cilantro because it can be overpowering.
